COCOA

Cocoa beans are fermented, dried, roasted and cracked into nibs. These nibs are pressed under hydraulic pressure to remove 75% of its cocoa butter. This leaves behind chocolate liquor in a paste form which is then dried and ground into unsweetened cocoa powder.

Cocoa Liquor / mass is pure cocoa mass in a solid or semi solid form . This is produced from cocoa beans that have been fermented , dried , roasted and separated from their skins . The beans are ground into cocoa mass / paste and then melted to become liquor . This liquor is then either separated into cocoa solids and cocoa butter or cooled and moulded into blocks of raw chocolate.

Cocoa butter is a pale-yellow edible vegetable fat which is cold pressed out of cocoa beans . Cocoa butter has a cocoa flavour and aroma which melts at body temperature and gives chocolate its unique mouthfeel .

Couverture is a name given to a certain class of high quality chocolate which contains a higher percentage of cocoa butter than baking or eating chocolate.  All chocolate bars contain mainly the same base ingredients such as cocoa powder , cocoa butter , sugar and milk powde . Whereas , a couverture contains a higher percentage of cocoa butter compared to other ingredients . This additional cocoa butter , combined with proper tempering, gives the chocolate more sheen , a firmer snap when broken and a creamy mellow flavour .

Compound is made up of cocoa powder , edible vegetable fat , sugar and milk powder . It is a low cost alternative to real chocolate since it uses vegetable fat instead of the expensive cocoa butter.

Gelatin is a food ingredient that is obtained from cattle and consists of the protein, collagen and minerals . Almost  90%  is made of protein and the rest is water . It is a very special animal origin food ingredient that has many uses , especially in the food sector .  An extremely beneficial food ingredient Gelatin is transparent , tasteless and odourless . It is most commonly used in the food industry and also pharmaceutical and cosmetic industry . It acts as a gelling and thickening agent in the liquid nutrients it enters . There are two types of Gelatin i.e. powder Gelatin and leaf Gelatin . While powder Gelatin is mostly used in industrial applications , leaf Gelatin is used in kitchens .

Dairy

Powdered milk , also called as milk powder is a manufactured dairy product made by evaporating milk to dryness . One purpose of drying milk is to preserve it as milk powder because it has a far longer shelf  life as compared to liquid milk and it does not need to be refrigerated due to its low moisture content . Another purpose is to reduce its bulk for the economy of transportation . The different types of milk powders are Fat Filled Milk Powder (FFMP) , Skimmed Milk Powder (SMP) , Full Cream Milk Powder (FCMP) , Whey Powder , Buttermilk powder etc

Cheese is a dairy product that is derived from milk and produced in wide ranges of flavours , texture and forms by coagulation of the milk protein casein . It comprises of proteins and fat from the milk . During production , the milk is usually acidified and the enzymes of rennet are added to cause the milk proteins to coagulate . The solids i.e.  curd are separated from the liquid i.e. whey and pressed into final form . There are various types of cheese produced in several countries . Their styles , textures and flavours depend on the origin of milk , whether they have been pasteurized , the butterfat content , the bacteria and mold , the processing and how long they have been aged for. 

 Butter is a dairy product made from the fat and protein components of milk. It is a semi solid emulsion at room temperature which consists of approximately  80%  butter fat . It is used at room temperature as a spread , melted as a condiment and used as an ingredient in baking , sauce making , pan frying and other cooking procedures . It is made by churning milk to separate the fat globules from the buttermilk . Salt and food colourings are sometimes added to butter.

Casein is the chief protein in milk and the essential ingredient of cheese . In its pure form , it is an amorphous white solid which is tasteless and odourless , while its commercial type is slightly yellow with a pleasing odour. Cow’s milk contains about 3% casein . Casein is a complete protein which means it contains all of the amino acids required by our bodies to function . Commercial casein is made by one of the two methods which is precipitation by acid which produces acid casein or coagulation by rennet which produces rennet casein . The precipitated casein curd is separated from the whey , then washed and dried . The water-soluble derivatives of acid caseins which are produced by reaction with alkalis are called caseinates . Casein is used in prepared foods , medicines , dietary supplements and cosmetics . Industrial applications of casein include paper coatings , glues , paints , plastics and man-made fibres.

Confection

Caramel is a medium to dark-orange confectionery product made by heating a variety of sugars . It can be used as a flavouring , as a filling or as a topping. The process of caramelization consists of heating sugar slowly and as the sugar heats , the molecules break down and re-form into compounds with a characteristic colour and flavour . In simple words caramel is simply sugar which is cooked until it turns brown . Granulated sugar has no smell and has a simple sweet taste but , when heated it melts and darkens developing complex aromas and flavours that tastes less sweet and more toasty.

Marshmallow is a type of confectionery which is typically made from sugar , water and gelatin whipped to a solid but soft consistency . It is used as a filling in baking or molded into shapes and coated with corn starch .

Condiments&Sauces

Tomato ketchup is a sweet and tangy condiment made from tomatoes, sugar & vinegar with seasonings and spices . It is most often used as a condiment to dishes that are usually served hot and may be fried or greasy . It is sometimes used as an ingredient in other sauces and dressings .

Mayonnaise is a thick cold sauce or dressing commonly used in sandwiches , burgers , composed salads and on French fries . It also forms the base for many other sauces . It is a thick emulsified sauce made by slowly incorporating a thin stream of oil into raw egg yolks . Emulsions happen when two substances that don’t mix such as fat and water come together in a suspension.

Salad dressings are typically grouped into two categories i.e. creamy dressings or vinaigrette dressings . The creamy dressings use mayonnaise , sour cream or yogurt as a base while the vinaigrette dressings use oils and vinegars or fruit juice and condiments or spices for a base . Salad dressing is a sauce which is used to make an entire salad tastier . A dressing is an oil in water emulsion and generally consists of a combination of oil , water , vinegar , citric acid , salt , spices and an emulsifier.

Mustard is a condiment made from the seeds of a mustard plant . The whole, ground , cracked or bruised mustard seeds are mixed with water , vinegar , lemon juice , wine or other liquids , salt and often other flavourings and spices to create a paste or sauce ranging in colour from bright yellow to dark brown.

Worcestershire sauce is a fermented condiment made from a base of vinegar and flavoured with anchovies , molasses , tamarind , onion , garlic and other seasonings . The flavour is savory and sweet with a distinct tang provided by the vinegar .

Chili sauce are condiments prepared with chili peppers . Chili sauce may be hot , sweet or a combination of both . Its ingredients typically include chopped chili peppers , vinegar , sugar and salt that are cooked and which thickens the mixture . Additional ingredients may include water , garlic , other foodstuffs , corn syrup , spices and seasonings . Some varieties use ripe red pureed tomatoes as the primary ingredient .

Steak sauce is normally brown or orange in colour and often made from tomatoes , spices , vinegar , raisins and sometimes anchovies. The taste is either tart or sweet with a peppery taste similar to Worcestershire sauce.

 Barbeque sauce also abbreviated as BBQ sauce is a sauce used as a marinade , basting , condiment or topping for meat cooked in the barbeque cooking style . BBQ sauce is often based on tomato sauce but with much more sugar . The ingredients of BBQ sauce may vary but mostly includes vinegar , tomato paste or mayonnaise as a base as well as liquid smoke , onion powder , spices such as mustard and black pepper and sweeteners such as sugar or molasses.

Vinegar is an aqueous solution of acetic acid and trace chemicals that may include flavourings . Vinegar typically contains 5-8% acetic acid by volume . Usually , the acetic acid is produced by the fermentation of ethanol or sugars by acetic acid bacteria . There are many types of vinegars depending on source materials . Apple cider vinegar is a vinegar made from fermented apple juice and is used in salad dressings , marinades , vinaigrettes , food preservatives and chutneys . White vinegar is made by feeding oxygen to vodka like grain alcohol causing bacteria to grow and acetic acid to form . It is those acids that give vinegar its sour taste . Vinegar can be made from any alcohol , wine , cider or beer but it is the grain alcohol that gives distilled white vinegar its neutral profile . Red wine vinegar is made by fermenting red wine , then straining and bottling it . It is often aged before bottling to reduce the intensity of the flavour .
